Smoked sausage blend 105 is my go to blend for making several different fresh and smoked sausages. I mix high temp Ghost Pepper Cheese or High Temp Cheddar and make the most amazing sausage. I experiment adding my homemade dehydrated jalapeño/habanero powder and have never, ever had a bad sausage. Might as well say it here also, I have used pork sausage #10, bratwurst, jalapeño smoked sausage, italian, and chorizo. All fine blends. This company has been blending seasoning for a long time and they know how.
