The beauty of Thanksgiving lies in tradition, but who says we can't spruce things up a bit? We've created a blend of the familiar with a hint of the extraordinary. Let's dive into some sausage-infused Thanksgiving recipes that are bound to be new favorites.
1. Sausage & Cranberry Stuffing
Ingredients:
- 1 lb of your favorite sausage, crumbled
- 1 cup dried cranberries
- 6 cups of cubed bread (preferably day-old)
- 1 onion, finely chopped
- 2 celery stalks, chopped
- 3 cups chicken or turkey broth
- 2 tsp poultry seasoning
- Salt & pepper to taste
- 2 tbsp butter
Instructions:
- In a large skillet, brown the sausage. Remove and set aside.
- In the same skillet, melt butter and sauté onions and celery until translucent.
- In a large mixing bowl, combine bread cubes, cooked sausage, sautéed onion and celery, cranberries, poultry seasoning, salt, and pepper.
- Gradually add broth, ensuring the mixture is moist but not soggy.
- Transfer to a baking dish and bake at 350°F for 35-40 minutes or until the top is crispy.
2. Pumpkin & Sausage Soup
Ingredients:
- 1 lb sausage, crumbled
- 2 cups pumpkin puree (canned or fresh)
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tsp sage, chopped
- 1 tsp thyme
- Salt & pepper to taste
- Olive oil for sautéing
Instructions:
- In a large pot, sauté the onion and garlic in olive oil until translucent.
- Add the sausage and cook until browned.
- Pour in the chicken broth and pumpkin puree, bringing the mixture to a boil.
- Lower the heat and add heavy cream, sage, thyme, salt, and pepper.
- Let simmer for 20-25 minutes, stirring occasionally.
- Serve hot with a sprinkle of fresh sage on top.
