The beauty of Thanksgiving lies in tradition, but who says we can't spruce things up a bit? We've created a blend of the familiar with a hint of the extraordinary. Let's dive into some sausage-infused Thanksgiving recipes that are bound to be new favorites.

1. Sausage & Cranberry Stuffing

Ingredients:

  • 1 lb of your favorite sausage, crumbled
  • 1 cup dried cranberries
  • 6 cups of cubed bread (preferably day-old)
  • 1 onion, finely chopped
  • 2 celery stalks, chopped
  • 3 cups chicken or turkey broth
  • 2 tsp poultry seasoning
  • Salt & pepper to taste
  • 2 tbsp butter

Instructions:

  1. In a large skillet, brown the sausage. Remove and set aside.
  2. In the same skillet, melt butter and sauté onions and celery until translucent.
  3. In a large mixing bowl, combine bread cubes, cooked sausage, sautéed onion and celery, cranberries, poultry seasoning, salt, and pepper.
  4. Gradually add broth, ensuring the mixture is moist but not soggy.
  5. Transfer to a baking dish and bake at 350°F for 35-40 minutes or until the top is crispy.

2. Pumpkin & Sausage Soup

Ingredients:

  • 1 lb sausage, crumbled
  • 2 cups pumpkin puree (canned or fresh)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp sage, chopped
  • 1 tsp thyme
  • Salt & pepper to taste
  • Olive oil for sautéing

Instructions:

  1. In a large pot, sauté the onion and garlic in olive oil until translucent.
  2. Add the sausage and cook until browned.
  3. Pour in the chicken broth and pumpkin puree, bringing the mixture to a boil.
  4. Lower the heat and add heavy cream, sage, thyme, salt, and pepper.
  5. Let simmer for 20-25 minutes, stirring occasionally.
  6. Serve hot with a sprinkle of fresh sage on top.
