Best snack stick I have ever made
By far the best bbq snak stick I've used. I usually add just a little more brown sugar and bbq rub for 10 lbs just because I like a really sweet bbq stick. But it is very good on its own. Sausage maker supplies will have my business for years to come
When using this seasoning with Venison only - I recommend using more water than recommended on the package. I also found that the recommended about of seasoning is a little under flavored for a BBQ Stick. Both of these items I encountered are probably due to the venison having its own flavor profile and the venison being so lean. The meat was twice ground once 1/4 inch coarse and then 1/8 inch fine. Sticks went under a hickory smoke to about 155F - then quinched in the fresh Wisconsin Snow! I cant blame the product for my results on this batch - The sticks that I made are BBQ Tastey and very much what you would expect as far as texture.
